NELLIKAI SADAM/AMLA RICE

Nellikai is Gooseberry in english and Amla in hindi.I recently saw in a magazine this simple and awesome rice recipe and soon gave it a try,This amla is loaded with Vitamin C and has many medicinal properties.It buds immunity and strengthens bones.As we all kow amla was widely used in the making of various ayurvedic preparations and so it is apltly termed as wonder berry.My daughter loves arinellikai which is much smaller in size and tangy to taste. Cooked Rice 1 cup
Gooseberry 2
Mustard 1/2 tsp
Urad Dal 1/2 tsp
Channa Dal 1/2 tsp
Groundnut 1 tsp
Green Chilli 2
Salt to tatse
SesameOil 3 tsp
Curry Leaves 1 sprig
Lemon Juice 1/2 tsp

HOW TO MAKE
  • In a pan add sesame oil and add mustard,urad dal and channa dal to splutter.Add groundnuts,curry leaves and chopped green chillies.

  • Grate amla and add to the pan.

  • Mix well and add salt and lemon juice.

  • After a while add cooked rice and mix it well.

  • Nellikai Sadam/Amla Rice is ready.Serve with raita,chips,curry or papad.

Notes
  • Use sesame oil for better taste.
  • After adding grated amla,don't cook for long.
  • You can add chilli paste also.
  • If you like to make it richer add cashews.

VANGI BATH/BRINJAL RICE/LUNCH BOX IDEA/RICE VARIETY

DSC01351Vangi Bath or Brinjal Rice is a traditional rice variety of Karnataka.There are many among us who don’t like brinjals but iam sure they will also love this rice once they try this vangi bath.Normally I make this for lunch box,but it can be equally enjoyed at home too.It has the aromatic spices that go into it and the juicy brinjal adds to the flavour.All karnataka households have a special place for vangi bath in their houses and I learnt this from my MIL who used to make this when I got married.Now for the recipe of Vangi Bath..

INGREDIENTS

TO ROAST AND GRIND

Channa Dal 2 tsp
Urad Dal 1 tsp
Coriander Seeds 2 tsp
Red Chilli 3
Clove 3

OTHER INGREDIENTS

Long Green Brinjal 2
Onion 1
Mustard 1/2 tsp
Channa Dal 1/2 tsp
Oil 2 tsp
Red Chilli Powder 1/2 tsp
Turmeric Powder 1/2 tsp
Salt to taste
Curry Leaves a sprig
Cashewnuts a few
Cooked Rice 1 cup

HOW TO MAKE

  • In a pan dry roast all the ingredients given in the to roast and grind table.Transfer it to a blender.

  • Powder the roasted ingredients.In a pan add oil,mustard and urad dal and cashewnuts.

  • Once they have crackled and dal and cahews turn brown,add chopped onion and curry leaves.After onion turns pink add chopped brinjals.

  • Add red chilli powder and turmeric powder and fry a bit.

  • Add now salt and roast and ground powder.Wait till the spices are cooked well and oil leaves the sides.

  • Cook rice and cool it.Add the brinjal spice mixture.

  • Vangi Bath or Brinjal Rice is ready.

Notes

  • You can temper with ghee for additional taste.
  • You can use round purple brinjal,long purple brinjal or round green brinjal.
  • If you want more spicy add more chillies in the powder.

MANGO RICE/LUNCH BOX IDEA/RICE VARIETIES

Mango Rice is one easy and tangy rice variety which can be made in no matter of time.I tasted this at a friend’s place and was too tempted to make this for lunch box to my daughter.She likes mango but was not sure how she would like to have this as a rice variety.It has groundnuts and chilles which add to the flavour and mingles with rice well.It tastes awesome even long after it is made and so it fits the category of preparing for lunch box.Mango Rice is a tasty rice and here goes the recipe for same..

Cooked Rice 1 cup
Raw mango(grated) 1/2 cup
Mustard 1/2tsp
Urad dal 1/2 tsp
Channa Dal 1/2 tsp
Groundnut 1 tsp
Green Chilli 2
Curry Leaves 1 sprig
Turmeric  Powder 1/4 tsp
Salt to taste
Sesame Oil 3 tsp

HOW TO MAKE

  • In a pan add sesame oil and mustard.Once mustard crackles add urad dal,channa dal and green chilli.Add now curry leaves,asafoetida and turmeric powder.

  • Grate raw mango and keep ready.Cook and cool the rice completely.

  • Add the temperings and grated mango  with salt to taste.Mix well.

  • Mango Rice is ready.Serve with any chips.

Notes

  • Adding red chilli will also add more taste.
  • Choose mango which is of medium sourness,otherwise rice will be too sour.
  • Adding groundnuts adds a nice crunch to rice.

PEAS PULAO/LUNCH BOX IDEA/RICE VARIETIES

DSC02520I always love to make Peas Pulao for lunch box or dinner.It is filling and easy to make with minimal ingredients.I prefer to keep the recipe simple and my daughter is fond of this pulao very much.It is so flavourful that you might end up eating more.Tastes great with any raita or gravy,it is a tasty solution f making the kids eat.Some add onions,I have not added in this recipe.It tastes equally good without onion too.Try out this simple and awesome recipe of the classic pulao recipe Peas Pulao.

INGREDIENTS

Basmati Rice 1 cup
Green Peas 1/2 cup
Cumin/Jeera 1/2 tsp
Star Anise 1
Bay Leaf 1
Clove 2
Grated Garlic 1/2 tsp
Oil 1 tsp

HOW TO MAKE

  • Soak basmati rice in water for half an hour.In a pressure cooker add oil and add jeera to splutter.

  • Add now grated garlic,bay leaf and clove.

  • Add star anise and green peas.Fry a bit.Add soaked rice.

  • Add salt and 1 1/2 cups of water and pressure cook for 3 whistles.

  • Peas Pulao is ready.Serve with raita or any gravy.
