RAJMA SUNDAL/NAVARATHRI RECIPES

Rajma or Red Kidney Beans is a protein filled legume besides having numerous minerals.Usually we make Rajma Chawal or Pulao or any gravy.This is one easy and non fussy sundal variety apt for Navarathri and will be a hit among kids as well.My daughter is very fond of rajma and I made this on the first day of Navarathri itself.You can spice it with any masala and make a lot of variations.Rajma is known to have so much health benefits and it is good to make sundal for this season,where most would be fasting.Here goes the recipe of Rajma Sundal..

INGREDIENTS

TO GRIND

Coriander Leaves a few
Green Chilli 1
Ginger a bit
Jeera/Cumin 1/4 tsp

OTHER INGREDIENTS

 

Rajma 1 cup
Grated Coconut 3 tsp
Mustard 1/2 tsp
Urad Dal 1/2 tsp
Oil 1 tsp
Asafoetida 1/4 tsp
Curry Leaves a sprig
Salt to taste
Lemon Juice 1/2 tsp

HOW TO MAKE

  • Soak rajma overnight.Pressure cook in water by adding water for 3 whistles.

  • Grind the ingredients given in the to grind table.In a pan add oil and mustard.Once it crackles add urad dal and asafoetida.

  • Add boiled rajma,curry leaves and ground paste.

  • Mix well and add grated coconut.

  • Add lemon juice and salt and toss well.

  • Rajma Sundal is ready.

Notes

  • In place of jeera you can add omam or ajwain.
  • Adding ginger aids digestion.
  • Adding lemon adds a nice twist.

GREEN GRAM SUNDAL/NAVARATHRI RECIPES

DSC05018Green gram or moong bean as it is called is a legume variety full of health and energy.Besides being used in pesarattu,an andhra based dosa,payasam,salad and dal this one tastes great when made sundal with this. Today being first day of Navarathri this is an easy and most fast recipe to make.Colourwise also this sundal is appealing to the eyes and is dark green in colour.A tasty and quick naivedhyam for the GODDESS comes your way on the start of this festive season..

INGREDIENTS

    Green Gram Dal 1 cup
    Mustard 1/2 tsp
    Red Chilli 1
    Green Chilli 1
    Curry Leaves 1 sprig
    Asafoetida 1/4 tsp
    Oil 1 tsp
    Salt to tatse
    Coconut(grated) 3 tsp

                  HOW TO MAKE

                  • Soak green gram dal overnight in water.Next day pressure cook it  in water for 2-3 whistles adding a pinch of salt.Strain and set aside.

                  • In  a pan add oil and mustard seeds.Add curry leaves,asafoetida,red and green chilly.Add cooked green gram and salt.

                  Notes

                  • Adding a bit of jaggery enhances the taste.
                  • Be sure to soak overnight for proper cooking.
                  • Adding asafoetida helps in digestion.
                  • You can add grated gingerto aid digestion.

                  VELLAI KONDAKADALAI SUNDAL/CHICKPEA SUNDAL

                  DSC05035Vellai kondakadalai or chickpea sundal is a tasty and protein loaded sundal with grounded spices.All at home are a fan of this sundal and iam happy to post this for the forthcoming Navarathri celebration this week.All kids are fond of channa masala and any channa based recipe and this sundal is no exception to that.This is usually made in addition to navarathri,on any poojas or offerings to GOD.It is an easy recipe for beginners as well and do try this aromatic sundal this festive season..

                  INGREDIENTS

                  TO ROAST AND GRIND

                  Channa Dal 2 tsp
                  Coriander Seeds 1tsp
                  Red Chilli 2
                  Black Pepper 1 tsp
                  Jeera/Cumin 1 tsp

                  OTHER INGREDIENTS

                  Chick Pea/Vella Kondakadalai 1 cup
                  Mustard 1/2 tsp
                  Urad Dal 1/2 tsp
                  Green Chilli 1
                  Red Chilli 1
                  Red Chilli Powder 1/2 tsp
                  Turmeric Powder 1/2 tsp
                  Asafoetida 1/4 tsp
                  Salt to taste
                  OIl 1 tsp
                  Coconut(grated) 3 tsp
                  Curry Leaves 1 sprig

                  HOW TO MAKE

                  • Soak chickpeas in water overnight.Next morning pressure cook chickpeas for 3 whistles by adding a pinch of salt.

                  • Dry roast the ingredients given in the to roast and grind table.Transfer the ingredients to a blender.

                  • Powder the things coarsely.in a pan add oil,mustard,urad dal,red chilli,green chilli,curry leaves and asafoetida.

                  • Add boiled chickpeas,roasted powder,grated coconut,red chilli powder,turmeric powder and salt.Mix evenly.

                  • Chickpea Sundal/Vella Kondakadalai Sundal is ready.

                  Notes

                  • You can roast the coconut and grind with the other ingredients to add a nice crunch.
                  • Soak chickpeas overnight to cook them faster.
                  • You can use coconut oil for more flavour.

                  PEANUT SUNDAL/VERKADALAI SUNDAL/NAVARATHRI RECIPES

                  DSC04662Peanut or verkadalai is a tasty legume with which I have used in this sundal recipe.It is an easy sundal recipe for the Navarathri celebrations.Peanut has lot of goodness and iron content.As all legumes this  is filling and tasty.I have a few sundal recipes in my blog,but this and chickpeas sundal is a favourite at home.As we all know,kids are fond of peanuts and they’ll like it for sure.Normally I prepare sundal of one legume or dal variety each day on all the nine days and have variation each day.Do try the healthy version of this sundal and let me know..

                  Peanut/Verkadalai 1 cup
                  Mustard 1/2 tsp
                  Urad Dal 1/2 tsp
                  Red Chilli 1
                  Curry Leaves 1 sprig
                  Asafoetida 1/4 tsp

                  Salt to taste
                  Coconut(grated) 4 tsp

                  HOW TO MAKE

                  • Soak peanuts in water.Pressure cook for 3 whistles by adding a little salt.

                  Notes

                  • You can dry roast coarinder seeds and add for extra flavour to the sundal.
                  • Addition of green chilli along with red ones also adds to the taste.
                  • Some people temper with coconut oil for aroma.

                  KARAMANI SWEET SUNDAL/COW GRAM SWEET SUNDAL/NAVARATHRI RECIPES

                  Navarathri celebrations are round the corner and all must be busy preparing for the festivities.Each part of the state in india has a different way of celebrating and in Tamil Nadu golu or arrangement of dolls  in steps called padi is done and on nine days different varieties of dishes are made and offered as naivedhya to the GODESS.Chief among the things offered are sundal,a dish made out of legumes and dals.This one here is karamani or cow gram as it is called and  I have made it with a sweet note.This is tasty and fulfilling and can be made on ordinary days as well.See down below the recipe for Karamani Sundal.

                  INGREDIENTS

                   

                  Karamani/Cow Gram 1 cup
                  Jaggery 3 tsp
                  Coconut(grated) 2 tsp
                  Mustard 1/2 tsp
                  Urad Dal 1/2 tsp
                  Red Chilli 1
                  Oil 1 tsp
                  Salt to taste

                  HOW TO MAKE

                  • Soak karamani overnight.In the morning pressure cook by adding a little salt.Strain and keep aside.

                  • Take a pan add add oil,mustard,urad dal and red chilly.once they crackle add cooked karamani.

                  Notes

                  • You can avoid red chilli and mustard tempering,if you want the sundal sweeter.
                  • You can alternatively add green chilli in place of red ones.
                  • You can use red karamani too.
