MASHED POTATOES

Mashed Potatoes is an American recipe which is very predominantly used in their cuisine.It is very easy to make and this recipe is made by my dear daughter who loves to make international recipes.I am a bit conditional and do thigs all by myself in cooking,but this was an exeption.Since it is easy and quick to make and one of her favourite recipes,she chose to make this one.She has helped me in many occasions,be it chopping the veggies,preparing a dish,selecting dishes or plates for photography including props.This one is her own recipe and made by her.I am so proud of posting this today as she herself made it.See down below

INGREDIENTS

  • Potatoes(big)-3
  • Butter-1tsp
  • Garlic-2 pods
  • Mixed herbs-1/2 tsp
  • Black Pepper Powder-1/2 tsp
  • Salt-to taste
  • Milk-1/4 cup
  • Grated Cheese-2 tsp

HOW TO MAKE

  • Boil Potatoes and peel them.Mash with the help of a fork nicely.

  • In a pan add butter and crushed garlic.Now add mashed potatoes.

  • Add milk and salt to taste.

  • Add grated cheese and black pepper powder.

  • Add mixed herbs and mix well.

  • Serve with any bread or just as it is.

Notes
  • Add milk more if you find the potatoes too dry.
  • Add some more cheese at the time of serving for more taste.
  • You can top with fresh cream too.

ALU PARATHA

One of the tastiest all time favorite is this Alu Paratha.These potato filled dough kneaded to parathas are simply hard to resist.I have tried these at many restuarants and wished many a times to reproduce the same taste in my kitchen and only now I have come closer to the taste.Daughter loves these and I made for last weekend dinner these tasty alu parathas.We had curd and pickle  as side dish and so far this is the super combination for these type of Parathas.The trickiest part in this is the filling coming out and once you have learned to stuff them properly,these are easy to make.I have queued up in line methi and gobi parathas too.Now over to the recipe of Alu Paratha.

Boiled and mashed Potatoes 2 small
Wheat Flour 1 cup
Water to knead
Caraway Seeds/Ajwain 1/4 tsp
Cumin/Jeera 1/4 tsp
Red Chilli Powder 1/2 tsp

Garam Masala Powder 1/2 tsp

Notes

  • Place the filling in the centre of the dough and cleanly cover it.
  • Roll the dough smoothly and carefully so the filling doesn’t come out.
  • Make the dough soft by adding oil and easily pliable.

ALU MATAR

A classic dish from Punjab.Alu Matar is a favourite at home.It is a simple dish but full of flavour a treat to the tongue.You will end up eating one or more rotis or naan if made to perfection.I  once tasted it when my husband took me to his collegue's place.It was so good that i asked the recipe from my hubby's friend's wife and tried it at home.It was a hit.Nowadays i make it twice a month and is liked by all at home.You can boil and keep the potatoes in the fridge overnight,if making for the next day morning to avoid hurry burry,Now let's see how i made it.

INGREDIENTS

Potatoes-3
Green peas-1/2 cup
Onion-1
Tomatoes-2
Cloves-2
Turmeric powder-a pinch
Coriander powder-1/2 TSP
Red chilly powder-1/2tsp
Garam masala powder-1tsp
Oil 1tsp
Salt-to taste
Coriander leaves-to garnish

HOW TO MAKE

Pressure cook potatoes peel them and keep aside.
 
 
Take a kadai and add oil.When it gets heated,add jeera and cloves.Now add cut onions and after frying a little add turmeric powder,red chilly powder and garam masala.
Add green peas and tomatoes and fry for a while till they are soft and mushy.I have used fresh green peas so have added directly.If using dried ones soak them over night and boil it separately and add at this stage.
Add 1/2 cup water and let the masalas blend with the gravy.At this stage add salt.
Now add boiled potatoes.
                                                           
Mix well and cook till potatoes are well coated with the gravy.                                                                    
Garnish with coriander leaves and serve hot with rotis or naan.

Notes
1.You can use tomato puree instesd of whole tomatoes.
2.For richness to the gravy while garnishing add 2tsp of rich cream.
 
 
 
 
 
 
 

 
 


POTATO PODIMAS

Potatoes are an all time favourite veggie irrespective of age.In our house all are big fans of good old potato.I like it most because of its versatality and flexiblity.You can prepare innumerable variety of dishes with it and it can be featured for any time of the meal.Potato podimas happens to be hubby's favourite.I make this on sundays so that he can enjoy podimas fully.Moreover when you want to prepare a no onion dish this would be an excellent option.It's easy to make ,only the boiling part takes 10 minutes.If you are in a hurry you can boil and peel the potatoes the previous night and proceed with the rest on next day morning.Now to the recipe.
 
 
INGREDIENTS                                                                                                                                        
Boiled Potatoes 2
Urad Dal 1/2  tsp
Channa Dal 1 /2 tsp
Mustard 1/2 tsp
Asafoetida a pinch
Grated Ginger 1/2 tsp
Green Chilly 2
Grated Coconut 2 tsp
Turmeric Powder a pinch
Salt to taste
Oil 2 tsp
Lemon Juice 1 tsp

  • Boil potatoes and keep aside. Mash the potatoes.Heat a kadai add oil followed by mustard,urad dal,channa dal,grated ginger and turmeric powder.

  • Add the mashed potato mixture to the kadai and curry leaves.Mix well and add grated coconut and salt.Lastly add lemon juice and mix well.

1.You can make raw banana podimas as well.Same proceedure but make sure you boil raw banana.
2.You can add red chilly in place of green ones.

POORI MASALA

This Poori Masala is the one they serve in the restuarants along with hot pooris.This is purely a south indian style side dish for poori.Though sometimes i serve this with hot rotis as well.If you don't make it watery and keep the potato masala a little dry you can serve this with rava idly as well.This dish is a hit combo when served during breakfast.I made this last week for our brunch.Let us see how this is made.

Potato(boiled and peeled) 3
Onion 2
Green Chilli 2
Turmeric Powder 1/2 tsp
Oil 2 tsp
Mustard 1 tsp
Channa dal 1 tsp
Curry Leaves 1 sprig

HOW TO MAKE                                                                                              

  • Cut onions and keep aside.Boil and peel the potatoes.Take a pan and add oil and once it gets heated add mustard to splutter and then add channa dal and green chillies.

  • When done add turmeric powder and onions and sautes well.Add boiled potatoes and add salt.Mix well with water to get the desired consistency.Garnish with curry and coriander leaves.

  • You can add peas or tomatoes to this dish while sauteing the onions. 
  • At the time of garnishing you can squeeze half a lemon.
  • If the masala is watery add a mixture of gram flour/besan and water.
