UDIPI RASAM POWDER/KARNATAKA RECIPES

Udipi is a small town in Karnataka which has unique and tasty cuisine of its own.I have always devoured the rasam or saru as it is called in Karnataka very much.The special ingredients added and the spices that are carefully roast and ground to perfection makes it very flafourful.During my visit to Mangalore and Udipi 2 years back i had the chance to eat at the mutt in the temple.I was impressed by the tatse of food served there.It was truly an enchanting experience to see the glory of the GOD KRISHNA and the food served there.Moving to the recipe ,it is a careful mixture of roast and ground spices that are easily available in our pantry.Let's move on with today's recipe..

INGREDIENTS

  • Coriander Seeds-1/4 cup
  • Jeera/Cumin-1 tbsp
  • Fenugreek Seeds-2 tsp
  • Urad Dal=1 tsp
  • Mustard-1 tsp
  • Red Chillies-8
  • Curry Leaves-2 sprigs

HOW TO MAKE
  • Take a pan and dry roast coriander seeds.Once slightly brown,take thwm out.Now dry roast jeera.

  • Now dry roast methi and take it out once it changes colour.Add now mustard and urad dal.After mustard crackles and dal turns brown,take them out.

  • Now it turn for red chillies and curry leaves.Roast them too.Allow all the ingregients to cool down.

  • Once cooled place them on a blender and grind coarsely.

  • Udipi Rasam Powder is ready.Store in air light bottle.

Notes
  • You can a teaspoon of peppercorns,if you want.
  • You can keep this in an air tight container for a month.
  • If you want to less spicy,cut down red chillies as per your taste.

HOMEMADE PEANUT BUTTER

It was my long wish to make Peanut Butter at home.I was always of the opinion that it would not turn out nice and i will ultimately end up wasting the ingredients used.But when i was a asked to write for Kungumam Thozhi Magazine last month for  30 various dal/legume variety dishes,i knew i have to try this.It is a lot cheaper and more healthier if you make it this way. I searched google for many recipes but ended up in this because of its simple and easy ingredients.And ofcourse it was quick to make too.It took less than 15 minutes for the whole process and when it was served with simple toasted bread,it felt heavenly.I had made only a small batch hesistating about the result but was soon seen making more in the kitchen as the jar was wiped clean by daughter dear.Want to learn how to make this?Scroll below and see..

HOW TO MAKE

  • In a pan dry roast the peanuts till they are slightly brown.

  • Once cooled down rub them with the help of your palms and phew their skins away and place them on a blender.

  • Grind it to a fine powder.Add salt.

  • Add honey  followed by  sunflower oil.

  • Grind again to mix all the ingredients well.After 5 minutes run te mixer again.Ensure that the mixer doesn't heat up.You can repeat the proceedure at regular intervals till creamy texture is obtained.

  • Homemade Peanut Butter is ready.Relish it with toasted bread or cut apple pieces.

  • You can add palm sugar or powdered jaggery in place of honey.
  • You can flavour it with chocolate powder for additional flavour.
  • You can use this for cakes,cup cakes and muffins,
  • This can be added to milkshakes as well.

HOT CHOCOLATE DRINK MIX/BEVARAGES




All are fond of Hot Chocolate  at home.The temperature has done down  here and it is always comforting to have a hot cup of chocolate anytime for any age group people.I made a fresh batch of Hot Chocolate Drink Mix yesterday and it was a huge hit home.People who are in the habit of drinking coffee will surely like this as this has the sweet taste of milk from the milk powder and slight bitterness from the cocoa powder.I searched for the recipe in the internet and found it quite interesting and sounded tasty and immediately started making it.This is a filling and creamy drink and kids will enjoy it to the core.People who like to gift for some occasion such as Christmas or New Year can easily make this and gift pack for their friends.Sounds like a nice edible gift right?Open-mouthed smile This can be kept for at least 6 months if stored with proper care.So what are you waiting for?Start making your fresh batch of Hot Chocolate Drink Mix and make it and let me know..

Cocoa Powder 1 cup
Sugar (Powdered) 1 cup
Choco Chips 3/4 cup
Cinnamon powder 1/4 tsp(optional)






HOW TO MAKE

  • Take sugar in the blender and powder it.

  • Add cocoa powder milk powder and cinnamon powder and run the mixer again.

  • Add choco chips and blend once again to a smooth powder.

  • Hot Chocolate Drink Mix is ready.Enjoy mixing this mix with hot water or if you want it richer with hot milk.

Notes

  • You can store it in an air tight container and keep for 6 months.
  • You can use any milk powder and cocoa powder of your liking.
  • You can also add dry  vanilla extract in place of cinnamon.
  • After preparing hot chocolate you could top it with marshmallows for additional taste.
  • Also fresh whipped cream can be topped.
  • You can also use white chocolate  chips.

THAI GREEN CURRY PASTE/THAI RECIPES

DSC04759It was my long time wish to try something from south east asian country such as Thailand,mainly because they always include a lot of aromatic herbs and leaves in their cuisine.As we can see there are many similarities in the cuisine of our neighbouring countries and ours.I liked one recipe of a simple thai  curry and for that you need to make a green paste.I later learnt that with this green paste you can not only make a curry but a variety of dishes as well.So I thought of posting a separate recipe for my blog of this delicious, aromatic and flavourful paste which can be made in no time.And the good part is you can store it in fridge for more than 10 days.I will post a green thai curry later and other recipes in the near future.So here goes the easy Thai Green Curry Paste recipe..

HOW TO MAKE
  • Grate lemon zest.In a plate keep ready all ingredients given in the table except,salt,lemon juice,black pepper powder and cumin powder.

  • Place the ingredients in a blender.Squeeze lemon juice.

  • Add cumin powder,black pepper powder and salt.Grind to a smooth paste.

PURI FOR CHAATS/CHAAT RECIPES

DSC04571I have been making chhats these days.What started with just papdis became a series of chaat recipes and iam with puri for chaats now.I made Bhel Puri and Sev Puri and then came the chance for these cute puris.I also made Masala Puri,Dahi Puri and Pani Puri too.Since it is hygenic and economical too to make these puris .I was long searching for a perfect recipe for puri for chaats as every time I tried to make themeither they wouldn’t puff or would’t be crispy.I later stumbled upon the recipe in vah re vah and the puris were perfect.I made a large batch and was happy with the outcome.So when next time you are in mood for chats,try out these cute little puris and let me know..

Semolina/Sooji/Rava 1 cup
Maida 2-3 tsp
Baking Soda 1/4 tsp
Salt to taste
Water as needed
Oil 1 tsp for kneading+to deep fry

HOW TO MAKE
  • In a wide bowl add sooji,salt,baking soda and oil.Mix well.Add now maida.

  • Add 3 tsp of water again and mix till the mixture resembles bread crumbs.

  • Add required water and knead well.Strech and knead again and again.Cover with a damp cloth for half an hour.

  • After half an hour knead again.Roll  very thin with the help of a rolling pin.

  • Cut into round shapes and keep it ready.

  • Heat oil and deep fry say 5-6 puris at a time.Fry till golden brown.

  • Drain in a tissue.

  • Crispy puris for chaats are ready.

Notes
  • Knead the dough well for 10 minutes to get crispy puris.
  • Cover the dough with a wet cloth and keep it covered for half an hour.
  • Roll the dough very thin to get puff puris.
  • Adding baking soda ensured crispness.
  • Store in an air tight container.
