PINEAPPLE KESARI

Pineapple kesari is one of the rare things i make at home.So when guests come or there is some occasion i make it.Normally this is served in weddings and other functions.But for those who indulgence in sweet tooth the reason to make it really doesn’t matter.So last week i made this just like that and served it during sunday brunch to make it extra special.The texture came out so smooth and taste was perfect too.The joys of feeding others is itself makes me happy.So here goes the recipe..

INGREDIENTS

Semolina/Sooji 1 cup
Pineapple pieces 1cup(cut finely)
Sugar 2 1/2-3 cups
Cashewnuts a few
Cardamom a pinch
Ghee 6 tsp
Water 3 cups
Pineapple essence 3 drops

HOW TO MAKE

  • In a pan add ghee and fry cashews till golden brown and set aside.In the same pan roast rava till golden brown.

  • Meanwhile chop the pineapples and adding water to it bring it to a boil.then seive it when cool.

  • Add water to it and mix well and add pineapple chunks stirring continuosly avoiding lumps.Wait till rava is cooked and then add sugar and mix well.

  • Add pineapple essence and roasted cashewnuts.Also add ghee.

  • Wait till ghee leaves the sides.

  • Yummy pineapple kesari is ready.Serve hot.

Notes

  • You can make the same kesari with apple as we.
  • You can add a raisins too along with cashewnuts.
  • Be sure to cook rava well before adding sugar.

Come July- august, the whole month will be filled with festivities and fasting too.For that we have make some offering to GOD and it is always a tasty affair for me to indulge into making sweets.I always look to it that the offerings made are authentic and well tried at home.No new fancy recipes here.So as I was wondering what to make for this aadi velli i.e. fridays between july 15th and august 15th the old recipe  aval kesari caught my attention.I was looking for something easy to make and which is traditional too and ofcourse tasty.
I have vella aval in my blog this one is made with sugar and it’s so easy to make that even in your hurry burry mornings too you can make and offer it to your GOD.As always in fasting eating sweets is permitted,so you can very well make this recipe and relish too.Now for Krishna Janmashtami  also you can make this as we all know about KRISHNA and Aval.It is a simple and tasty sweet that follows here…

CHOCOLATE KESARI

It is always a joy for me even when there is no occasion to make sweets.Since daughter has a sweet tooth I don’t need occasion to make them.I do make many traditional sweets but also would like to try new sweets and this one I learnt through my blogger friend sowmya subramanium from her blog.My thanks to her.Kesari is made with plain orange food colour as a flavoring and I have seen pineapple and banana kesari too.I have fruit kesari in my blog but this one was so tempting that I needed to try right away.This can be made pretty soon and for bachha party this one is going to be a true hit.You can make so many variations with kesari,the choice is limitless and you can let go of your imagination to suit your taste.So here’s a new sweet coming your way.

INGREDIENTS
Semolina 1cup
Sugar 3/4cup
Cocoa powder 2tsp
Milk 1cup
Water 1/4cup
Ghee 2-3tsp
Cardamom powder a pinch
Gems to decorate

HOW TO MAKE
  • Dry roast semolina in a pan by adding a little ghee.Fry till nice aroma comes.Add milk,water and cardamon powder.Be sure to mix well avoiding lumps.Once done add sugar and cocoa powder and mix well and add the remaining ghee.

  • Your yummy chocolate kesari is done.

  • I have put them in moulds and decorated with gems.You can add roasted cashews and raisins and serve them as it is or cut into squares.

    Notes
  • You can add chocolate chips or chocolate shavings while serving for functions.
  • You can also add jellies as that would attract kids.
  • You can use bournvita or boost in place of cocoa powder.


 

FRUIT KESARI

I was planning to make Fruit Kesari for a long time,but somehow couldn't make it.As i fast on Thursdays for SHIRDI SAI BABA i made it last thursday and offered it to God.It is entirely a different matter that it was origanally prepared for God and we relished on it later.It came out very well and i could eat it the next day too.My daughter loved it very much.I have tasted this fruit kesari in my BIL'S son's upanayanam(thread ceremony) for the first time and tried at home several times.Each time i try with a different fruits,the results believe me were really fruitful.As i said this sweet is prepared in many weddings and functions but it is always nice to make something at home and eat pipng hot.Sheera or suji ka halwa as it is called in the north,it is always a great treat to eat this simple yet delectable dessert.

INGREDIENTS

Sooji/Rava/Semolina 1 cup
Sugar 2 cups
Apple 1/4 cup
Banana 1/4 cup
Green grapes 1/4 cup
Ghee 1/2 cup
Cashewnuts 3 tsp
Raisins 3 tsp
Tutti Frutti 3 tsp
Water 2 1'/2 cups
Cardamom Powder a pinch
Yellow food colour a pinch

PROCEEDURE

  • In a pan take some ghee and fry cashewnuts and raisins.See to that the dry fruits are fried and raisins bloated.In the same pan add rave and roast till nice aroma comes.Switch off the flame and add thewater,mix well and turn on the flame by continuosly stirring the mixture.This is to prevent lumps.

  • Now add sugar and yellow food colour and allow it to cook in a low flame.Add ghee at this stage and cook till it leaves the side.Once cooked add cut fruits and tutti frutti and mix well.

  • Enjoy this sweet by making it as an offering to your favourite GOD and seek blessings.

Notes

  • You can add any fruit of your choice like pineapple,cherries,black grapes etc.
  • Any essence can also be added.
