MOTI CHOOR LADOO/DIWALI SWEETS

DSC03840Moti choor Ladoos always fascinated me.Growing up in New Delhi,I have seen in sweet shops  halwai making these cute balls in their corners and arranging in decorated trays.Halwai is the man who makes sweets in hindi.We can actually see them making as they usually make on the side entrance of the shops.I have never tried it to make but ofcousre,eaten many times.These are easy to make,if followed the proceedure correctly makes it a workable task.The making of the boondis are same as that of regular boondis,but a slight variation.As you will see in the recipe blow,it is not that hard in making these sweet indulgence.

INGREDIENTS

 

Besan 1 cup
Rava 1 tsp
Food Colour a pinch
Water as needed to make batter
Melon Seeds a few
Ghee 1 tsp
Oil to deep fry
Rose Water a few drops
Cardamom Powder a pinch

TO MAKE SUGAR SYRUP

Sugar 3/4 cup
Water 1/2 cup

HOW TO MAKE

  • In a wide vessel add besan.Powder rava in a mixer and add this to it.Add water and food colour and make a batter without forming lumps.

  • Take oil in a pan add heat it.Take  a perforated laddle start making boondis by pouring the batter directly on the hot oil.

  • Take out once done with the help of another laddle.Place on a plate for later use.

  • Make a sugar syrup with sugar and water.This should be of one string consistency.

  • Once sugar syrup is ready add fried boondis,cardamom powder and rose water.Mix well and put them on a blender.

  • Just grind more 2 seconds,the texture should be grainy as shown.

  • Add melon seeds and start making ladoos.

  • Delicious Moti Choor Ladoo is ready to relish.

Notes

  • Don’t make the boondis crispy,they shoild be cooked,that’s all.
  • You can add almonds or cashews for garnishing.
  • Original recipe callsfor frying the boodis I ghee,but I have used refined oil only.

MALADOO/DIWALI SWEETS

DSC03078Maladoo is an easy and quick fix sweet for any occasion and is a good option to make for diwali.Usually many people think when it comes to ladoo,it involves time and lengthy procedures but not so the case here.It can be made under 15 minutes with all available ingredients in your pantry.And of course it is loaded with protein and good for growing children.Yes,it is made with roasted gram which is so common to all households.With simple available things,this is how I made Maladoo..

DRY FRUITS LADOO/DIWALI SWEETS

Dry fruits ladoo is a healthy and tasty ladoo which can be made in a short period of time.I have made dry fruit burfi but I am trying  dry fruits ladoo for the first time.This recipe I searched while browsing and found it quite interesting.I have a quite a few ladoo recipes in my blog and will be posting some ladoo recipes this week.These ladoos are quite rich in taste and loaded with protein.The best way to celebrate diwali this year would be to try this out,so what are you waiting for?All at home enjoyed these balls of sweet indulgence and was a super hit here.Do try out and let me know..

INGREDIENTS

Dates 15
Mixed Nuts* 1/2  cup
Ghee 1 tsp

* I have used almonds,walnuts,cashews and melon seeds.

HOW TO MAKE

  • Roast all the nuts in a pan.Remove seeds from dates and chop or if using seedless dates chop them.

  • Transfer nuts into a blender and powder it coarsely.

  • In a pan add ghee and saute dates till it turns gooey.

  • Add powdered nuts and mix well.

  • Make balls and arrange on a plate.

Notes

  • You can use raisins,pista or other nuts of your choice.
  • You can add tutti fruti and cherries as well.
  • Don’t powder the nuts finely.
  • You can add silver paper as well as a garnish.

RAVA LADOO

Rava ladoo is one of the easiest and tastiest of the ladoo recipes that i know.It takes hardly 10 minutes to make this,,could you believe that?And it is filling to eat as well.I made this long back and it was due for long to post and here it comes.Mostly people think it is hard to make any kind of ladoo and for beginners this might sound pretty tricky but when you use the correct proportion of ingredients and mix well ladoo making will turn in to child’s play.So next time when preparing ladoos keep these points in mind and go ahead with your challenge to make the yummiest of ladoos.For rava ladoo we need to roast the rava and grind it to a powder.This you can do in a flour mill if you are making in large quantities say about close to a kilogram.But since i made this only a small quantity i ground it in mixer only.Now over to the recipe…

INGREDIENTS
Rava /Semolina 1 cup
Sugar 3/4 cup
Raisins a few
Cashewnuts a few
Cardamom Powder 1/4 tsp
Ghee 3-4 tsp
  HOW TO MAKE
  • Dry roast rava in a pan.Once cooled add it in a blender.Add sugar also to the blender and make it into a fine powder.

  • In a small pan add ghee and add raisins and cashewnuts.Add the rava-sugar mixture in a vessel.Top it with roasted nuts in ghee.Add cardamom powder.Mix well and add rest of the quantity of ghee.

  • Make ladoos with the above mixture.

  • Rava ladoos are ready to be relished.

Notes
  • You can use roasted rava available in the market and skip the roasting part.
  • You can add blanched almonds too.
  • If you find the mixture a little dry add a spoon of milk  and mix and then make ladoos.

BOONDI LADOO

DSC05314 It is Diwali season and time to make, eat and share sweets and snacks to  all and how could i forget my blogger friends?So as i was wondering what to make for a sweet this traditional boondi ladoo came to mind.It was a regular and compulsory sweet without which our Diwali was incomplete during childhood days.Mom is an expert in making these and as she and dad are visiting me this Diwali i wanted to try this badly.Here comes the recipe of boondi ladoo.an easy way.

INGREDIENTS

Besan/Gram flour/Kadala maavu 1 1/2 cup
Sugar 2- 2 1/2 cups
Elachi/Cardamon powder 2 pinches
Baking soda a pinch
Yellow food colour a pinch
Cashewnuts a few
Raisins a few
Sugar candy/Diamond kalkandu 2 tsp
Cloves 6
Oil to deep fry
Water 1/2 cup

HOW TO MAKE

  • In a vessel add Besan/Gram flour,baking soda,yellow food colour and water to make a thick dosa consistency batter.Add water slowly and mix don’t make it watery.

  • The batter’s consistency should be like this.Heat oil in a kadai and in the help of peforated laddle add the batter with help of another laddle and start tapping in.Slowly the drops of batter/Boondis will fall down on the oil.When the boondis are three fourth cooked take them out and place them on a big vessel.We don’t want crisp boondis here.

  • Meanwhile make a sugar syrup with sugar and water.In a vessel add sugar and water till it is evenly mixed.Make a one string consistency and you can do this by dipping your index finger and thumb so that it forms a one string. Once this consistency is reached switch off the flame and add cardamom powder.Now the sugar syrup is ready.

  • Now transfer the fried boondis on the syrup and repeat the boondi frying process by wiping the back side of the laddle to ensure making round boondis.Also fry cashews and raisins and add to the sugar syrup boondi mixture.Also add sugar candy/Diamond kalkandu and cloves.

  • Make ladoos while the sugar syrup is still warm.Allow it to cool.Store in an air tight box.

  • Do take care and fry boondis in hot oil.
  • Adding food colour is purely your choice,you can avoid it too
  • Addition of rose essence also imparts a unique taste and aroma.
