TAWA CHANNA

Tawa Channa is a fulfilling,guilt free snack which can be had at any time of the day.I stumbled upon this recipe in Tarla Dalal website and was glad i did.It had an instant liking at home and was easy to make as well.This is less time consuming and when unexpected guests drop over treat them with this scumptious snack and iam confident they'll like it for sure.Whatever be the occasion,be it a party or any gathering this will assume a special place.I have tried it to eat for dinner as well and it was really very filling,yet light on the tummy.This is oil free and with a minimal of spices it is a healthy option to eat without much worries.Scroll down for an easy to make Tawa Channa recipe and do try it out..

INGREDIENTS

  • Black Channa/Black Chick Peas-1 cup
  • Onion-1
  • Tomato-1
  • Ginger(grated)-1/4 tsp
  • Oil-1 tsp
  • Red Chilli Powder-1/2 tsp
  • Turmeric Powder-1/2 tsp
  • Garam Masala Powder-1/4 tsp
  • Chaat Masala Powder-1/4 tsp
  • Salt-to taste
  • Coriander Leaves-a few

HOW TO MAKE
  • Soak black channa overnight.Next day pressure cook with a little salt for 3 whistles.

  • In a tawa add oil followed by onions.Once the oions are slightly golden,add grated ginger.

  • Add chopped tomato.Now add red chilli powder,turmeric powder,garam masala powder,chaat masala powder and salt.Toss well.

  • Add cooked black channa now.Sprinkle some water so that all masalas mingle with each other.Add some freshly chopped coriander leaves.

  • Serve Tawa Channa hot directly from the tawa with crispy papdis.

Notes
  • You can squeeze some lime juice for tanginess.
  • You can add freshly chopped green chillies for more spice.
  • Add some black salt if you want to have extra chaaty feeling.

DAHI PURI/CHAAT RECIPES

It was a long time that I posted some chaat recipe.As Dhivya is fond of chaats I make these once in a fortnight.As it was a week before I made this and it was due in my list to post.Dahi based chaats are always refreshing and filling too and specially when you have friends coming over,this turns out to be a hit.As a part of New Year Celebrations last week,my daughter invited her friends over and this was one among the menu.I always keep the initial preparations done before and when that is done,rest is just a breeze.I have a few chaat recipes in my blog,but this is the first one which is cold chaat, meaning the one with curd.As chaats are loved by all,iam afraid this will be liked by everyone and do give it a try and let me know..

HOW TO MAKE
  • Mash Potatoes and add red chilli powder,cumin powder,turmeric powder and salt.Mix well and keep ready for future use.Mix sugar and salt with curd and keep it ready.Crack each puri carefully and arrange them on a plate.

  • Add mashed potato mixture and boiled green gram dhal in the holes of the cracked puris.

Notes
  • Serve puris immediately as soon as you have made this chaat,otherwise it will turn soggy.
  • You can make the chutneys a day before to save preparation time.
  • You can add sprouted moong also.
  • Black channa can be cooked and substituted for green gram dal.


MASALA PURI/CHAAT RECIPES

DSC04621 On a rainy day when you are really hungry,this Masala Puri will be like a bowl of happiness to you.I really mean it as it comforting,filling and yummy for your tummy.As I said in my previous post I have been making a few chaat recipes since last week and could click pictures at leisure.So today it is Masala Puri for you at Nithya’s Kitchen.This chaat unlike other chaat varieties is served hot with the gravy specially for it.I have had this many times and here in Bangalore it is very famous and is sold in many chaat shops.My daughter is much fond of this chaat so I made it for her and her visiting friends last week.Just a little preparation is needed before we start and once you have assembled the ingredients,chaat making is a breeze.So let’s make Masala Puri today.

HOW TO MAKE
  • Soak white peas overnight.Next morning pressure cook white peas in a pressure cooker for 3 whistles.Drain and allow it to cool.

  • Take half the quantity of cooked white peas,coriander and green chilli.Reserve some coriander for garnishing.Grind coarsely.

  • Take a pan and this puree to it.Add water if you find the ground mixture too thick.Add cumin powder,amchur powder,red chilli powder and chaat masala powder.Add salt and cook for 5 minutes.

  • Once the gravy reaches the correct consistency add rest of the peas and mix well.Now the gravy is ready to use in chaats.You can also use this as a side dish for rotis and puris.DSC04528DSC04867
  • Take a plate and break into pieces.Pour gravy over.Remember to reheat the gravy as the chaat tastes graet while hot.

Notes
  • The gravy should be hot when it is mixed with the rest of the ingredients.
  • Add some more red chilli powder and chaat masala powder on top if you want the chaat to be extra tasty.
  • You can also use papdis in place of puris.

PANI PURI/GOLGAPPA/CHAAT RECIPES

Pani Puri is a chaat which is tasty tangy and sweet to owing to the different chutneys and the water used in it.Iam very fond of Pani Puri and love to eat whenever we go out to eat.In North specially in Delhi where I grew up it is called Golgappa. Usually for making chaats at home,you need a lot of patience ad it is time consuming too as it requires assembling of lots of items.But with proper planning you can make the things in advance and enjoy with your family.In my earlier days of cooking too I had tried this recipe trying to recreate the same as I have had eating out.But with passing time I developed an easy method and started reading a few cookery books and later browsed a few sites which gave me an idea to improvise.The making of chaats and eating them is truly a enchanting affair,I end up eating as and when I make itWinking smile.So let’s learn to make the easy method of making yummy Pani Puri at home..

THINGS NEEDED TO MAKE PANI

Tamarind a gooseberry shaped ball
Water 2 cups
Cumin/Jeera Powder 1 tsp
Chaat Masala 1 tsp
Mint Leaves 1/8 cup
Coriander Leaves 1/8 cup+few for garnishing
Salt to taste

HOW TO MAKE PANI
  • Soak tamarind in water and extract juice.In a blender add coriander and mint leaves and adding a little water grind to a paste.Add this to the tamarind mixture.Add salt,cumin powder and chaat masala powder.Add water and garnish with coriander leaves.Pani for Pani Puri is ready.
OTHER INGREDIENTS
Puris 10-12
Pani 2 cups
Onion 1 chopped
Potatoes(boiled) 1
Red Chilli Powder 1/2 tsp
Turmeric Powder 1/4 tsp
Sprouted Green Gram(soaked overnight) 1/4 cup
Green Chutney 2 tsp
Sweet Chutney 2 tsp
Sev 1/4 cup
Salt to taste

HOW TO MAKE
  • Take puris in a plate and poke in the middle to fill things.Take boiled and cubed potato and mix it with red chilli powder,turmeric powder and salt.Fill this mixture by placing small cubes in the puri.

  • Next add sprouted green gram which is slightly par boiled.Add sweet chutney and green chutney.

  • Add chopped onion and then top it with sev.

  • Immerse these arranged puris in pani or add pani on top and serve immediately.

Notes
  • In place of sprouted green gram you can add soaked black channa.
  • Similarly you can top with boondis in place of sev.
  • You can add black salt to pani in place of ordinary salt.
