KALA JAMUN

It was sometime back that I made these cute Kala Jamuns.I have already in my blog,one recipe each for Khova Jamun and Dry Jamun,but this one is special and apt to post for the new year.This has a nut stuffing inside each of the balls which makes it rich and flavourful.Last year was special to me with few of recipes getting published in various magazines and newspapers.I also gained more viewership and my bloggotnoticed.I thank my readers for that and request you all to have continied support I the near future.As the year gets to a close and new year fast approaching I wish all my readers a Very Happy New Year 2016DSC04188

INGREDIENTS
Khova 1 cup
Maida 1/4 cup
Chopped Nuts* 1/3 cup
Sugar 1 cup+ 1 tsp
Water 1 1/2 cup
Food Colour(green) a pinch
Cardamon Powder 1/4 tsp
Oil to deep fry
Sodium Bi-carbonate a pinch

*I used chopped badam and pista

HOW TO MAKE
  • Take khoya,maida,sodium-bi-carbonate  and a teaspoon of sugar in a bowl.Knead to a soft dough by adding milk and water.

  • Take a small portion of the dough and add chopped nuts and green food colour and mix.This forms the stuffing.

  • From the remaining dough make balls.Make small balls out of the nut mixture too and place it inside the plain dough.

  • Close the dough,keeping in mind to fill the stuffing inside.Make all balls like this.

  • Heat oil in a kadai and slowly drop in the balls and take out when it attains a dark colour.

  • Take them out on a tisue.In a pan make a syrup with sugar and water.Add also cardamom powder.

  • When the sugar reaches half string consistency,switch off the flame and add fried jamuns.Soak for an hour.

  • Take them out and arrange on a plate.

  • Serve it with finely chopped nuts on top.

Notes
  • You can add cashews and raisins as a filling.
  • You can add any food colour.
  • You can top it with dessicated coconut also.

KHOYA BURFI/DIWALI SWEETS

DSC03857-001Khoya or solidified milk is an excellent source to many sweets.We can make many delicacies with khoya and this one a burfi with the same is a easy to make and a good option to try out for this diwali.This recipe can be made very quickly and is rich in flavour.I got a first taste of this sweet in a function held sometime back and learnt this recipe from my friend who had made that.This can be helpful to those readers with last minute preparations of the upcoming Diwali festivities.So if you are planning to please your family and friends with a fast yet,royal treat do try out this sweet and win accolades.

HOW TO MAKE
  • Bring khoya to room temperature and crumble it.Chop pistachios ad keep aside,

  • In a heavy bottomed pan add ghee and add khoya.Mix well till it changes colour.Now add sugar.

  • After 10 minutes of roasting,the sugar and khoya mixture would have amalgamated well and when the whole mass leaves the sides of the pan,switch off the flame.Transfer into a greased plate.

  • Add chopped pistachios on top and once cooled completely cut into squares.The piece would look like this as shown.

  • Enjoy Khoya Burfi.You can store this in fridge for about 10 days.

Notes
  • Traditionally pista is added as a garnish.But you can add any nuts of your choice.
  • Even after switching off the flame,the sweet mixture will not be of totally solid mass.It will be goey and chewy after cutting into squares.
  • Use unsweetened khoya of any available brand.

CORN FLOUR HALWA/DIWALI SWEETS

DSC03763Corn Flour Halwa was the most wanted to try recipe in my blog.This is also called karachi halwa and is a very easy recipe to follow.I have made quite a few halwas,but this halwa is an easy adaptable recipe and is foolproof too.Even beginners can try this with much confidence.I was  excited in making this halwa as this was my first time making this.The halwa came out very well and consistency was that of silk.I have see in sweet boxes with assorted sweets,this corn flour halwa finds a main place.They usually make in red,yellow,orange ad green colours.I had orange colour in my hand,so used it up.See down below the yummy recipe of Corn Flour Halwa.

INGREDIENTS

Corn Flour 1/2 cup
Sugar 1 1/2 cup
Water 2 1/2 cup
Ghee 4 tsp
Cashewnuts a few
Orange food colour a pinch

HOW TO MAKE

  • Mix corn flour in water without lumps.Add food colour to it.

  • Take a pan and add ghee.Roast cashews and keep aside.Make a syrup with sugar and water.

  • Once it reaches one string consistency add corn flour mixture.

  • Allow it to cook and keep on stirring to avoid lumps.

  • Once it is glossy add ghee.

  • Cook till ghee leaves sides and add roasted cashews.Spread halwa on a greased plate and let it set for 2 hours.

  • Cut in to squares.

  • You can use any colour of your choice.
  • You can also add any nuts of your choice.
  • This halwa requires very less ghee,so use as mentioned.

MOTI CHOOR LADOO/DIWALI SWEETS

DSC03840Moti choor Ladoos always fascinated me.Growing up in New Delhi,I have seen in sweet shops  halwai making these cute balls in their corners and arranging in decorated trays.Halwai is the man who makes sweets in hindi.We can actually see them making as they usually make on the side entrance of the shops.I have never tried it to make but ofcousre,eaten many times.These are easy to make,if followed the proceedure correctly makes it a workable task.The making of the boondis are same as that of regular boondis,but a slight variation.As you will see in the recipe blow,it is not that hard in making these sweet indulgence.

INGREDIENTS

 

Besan 1 cup
Rava 1 tsp
Food Colour a pinch
Water as needed to make batter
Melon Seeds a few
Ghee 1 tsp
Oil to deep fry
Rose Water a few drops
Cardamom Powder a pinch

TO MAKE SUGAR SYRUP

Sugar 3/4 cup
Water 1/2 cup

HOW TO MAKE

  • In a wide vessel add besan.Powder rava in a mixer and add this to it.Add water and food colour and make a batter without forming lumps.

  • Take oil in a pan add heat it.Take  a perforated laddle start making boondis by pouring the batter directly on the hot oil.

  • Take out once done with the help of another laddle.Place on a plate for later use.

  • Make a sugar syrup with sugar and water.This should be of one string consistency.

  • Once sugar syrup is ready add fried boondis,cardamom powder and rose water.Mix well and put them on a blender.

  • Just grind more 2 seconds,the texture should be grainy as shown.

  • Add melon seeds and start making ladoos.

  • Delicious Moti Choor Ladoo is ready to relish.

Notes

  • Don’t make the boondis crispy,they shoild be cooked,that’s all.
  • You can add almonds or cashews for garnishing.
  • Original recipe callsfor frying the boodis I ghee,but I have used refined oil only.
