Peanut or verkadalai is a tasty legume with which I have used in this sundal recipe.It is an easy sundal recipe for the Navarathri celebrations.Peanut has lot of goodness and iron content.As all legumes this is filling and tasty.I have a few sundal recipes in my blog,but this and chickpeas sundal is a favourite at home.As we all know,kids are fond of peanuts and they’ll like it for sure.Normally I prepare sundal of one legume or dal variety each day on all the nine days and have variation each day.Do try the healthy version of this sundal and let me know..
INGREDIENTS
| Peanut/Verkadalai | 1 cup |
| Mustard | 1/2 tsp |
| Urad Dal | 1/2 tsp |
| Red Chilli | 1 |
| Curry Leaves | 1 sprig |
| Asafoetida | 1/4 tsp |
| Oil | 1 tsp |
| Salt | to taste |
| Coconut(grated) | 4 tsp |
HOW TO MAKE
- Soak peanuts in water.Pressure cook for 3 whistles by adding a little salt.
- In a pan add oil,mustard,urad dal,asafoetida,red chilli and curry leaves.Add now the boiled peanuts.
- Add grated coconut and salt.Mix well.
- Peanut sundal/Verkadalai Sundal is ready for offering to GODDESS.
Notes
- You can dry roast coarinder seeds and add for extra flavour to the sundal.
- Addition of green chilli along with red ones also adds to the taste.
- Some people temper with coconut oil for aroma.
