Kara sev is one snack that can be prepared in no time.An apt savory item that is most suitable during rainy days,this snack will make you eat not just one.My mom used a large laddle with holes,through which she rubbed dough directly on to the oil.But sometimes she made this way also as i have made using thenkuzhal achhu.The peppery flavour is the highlight of the snack.This i learnt from my mom who is an expert in making snacks.So beginers can also indulge in making this snack as it is very easy to make.here is how i made it.
INGREDIENTS
| Besan/Kadala maavu/Gram Flour | 1 cup |
| Rice Flour | 1 cup |
| Black Pepper | 2 tsp |
| Salt | to taste |
| Butter/Oil | 2 tsp |
| Asafoetida | a pinch |
| Turmeric Powder | 1 tsp |
PROCEEDURE
- Sieve besan and rice flour and add salt, turmeric powder, and freshly ground pepper to it .Pepper can be ground in a mixer or in a mortar n pestle,if you have one. Add butter/oil and mix evenly.Make a dough by adding water little by little so that there are no lumps.
- Take the thenkuzhal achhu as shown here.Fill the dough in the press.Heat oil and press the dough directly on to the oil.When golden brown flip over.take out and drain excess oil.
- Break into pieces and enjoy this peppery snack.
Notes
- Remember to grind pepper coarsely to enhance the pepper flavour.
- Do not add too much of butter as this will result in breaking of kara sev.
- You can add 1/2 tsp of red chilly powder while mixing the dough,if you want spicier.
- If adding garlic add it by making a paste to the dough.
