One of the daily features is in my household is ‘what to pack for lunch’?I always ponder about this and try to include variety and health in each meal.So when i was running out of ideas i got this recipe from my friend who makes pulaos of different types.I was happy that this contained corn,my daughter’s favourite.Ypu can alternatively make this with baby corn as well.I have kept the spices minimal,you can increase the amount if you want.Also for a change in colour and extra flavour,i have added green peas,it adds a nice crunch to the pulao and tastes great with corn.
INGREDIENTS
| Basmati Rice | 1 cup |
| Onion | 1 |
| Corn Kernels | 1/4 cup |
| Green Peas | 1/4 cup |
| Oil | 1/2 tsp |
| Ghee | 1/2 tsp |
| Water | 1 1/2 cups |
| Salt | to taste |
TO GRIND
| Ginger | a bit |
| Coriander leaves | a few |
| Cashewnuts | 3 |
| Garlic | 1 pod |
| Tomato | 1 |
| Green chillies | 2 |
| Garam masala | 1 tsp |
| Red chilly powder | 1/4 tsp |
HOW TO MAKE
- Grind all ingredients give in the to grind table.Temper with jeera and add onions in a kadai.
- Soak basmati rice in water for half an hour.After the onions turn pink add corn and peas.Add after this ground paste and soaked rice.Add water and pressure cook till 3 whistles.
- Serve hot with any dry curry or raita.I packed with baby potato fry.
Notes
- You can grind with pudina leaves in place of coriander leaves.
- You can add baby corn instead of corn kernels.
- Addition of star anise and shahi jeera while roasting and grinding is another option.
