Pudina Rice i make whenever there is boredom to make anything which requires long preparations.This is a rice variety and a lunch box option too which is apt for the busy mornings.Normally rice is made daily at home with any gravy such as sambhar or rasam,but sometimes to break the boredom i make this.Pudina or mint is one flavourful leaf and enhances the taste of rice.As i was thinking what to make for lunch this suddenly cropped up mind and i thought since it is not in my blog,clicked the pictures as well.So scroll down for an easy recipe of pudina rice..
INGREDIENTS
| Rice (cooked) | 1 cup |
| Pudina | a fistful |
| Mustard | 1/2 tsp |
| Urad Dal | 1/2 tsp |
| Channa Dal | 1/2 tsp |
| Red Chillies | 2 |
| Coriander Seeds | 1 tsp |
| Salt | to taste |
| Oil | 1 tsp |
| Curry Leaves | a sprig |
| Cashewnuts | a few |
| Peanuts | a few |
HOW TO MAKE
- In a pan add oil and add mustard,urad dal,channa dal curry leaves,cashewnuts and peanuts one by one.After they crackle and dals turn golden brown ,take them out and keep for future use.In the same pan add coriander seeds,red chillies and curry leaves.Also add pudina.Switch off and allow it to cool and in a blender blend to a powder.
- Cook and cool rice and seperate the grains.Add the tempered mixture and powdered mix and salt and mix well.
- Enjoy pudina rice with vadams,papads or raita.
Notes
- You can add green chilles too in place of red ones.
- Adding pepper jeera powder is another variation.
