Lemon Rice or Nimbu chawal is an easy and tangy lunch box option and easy to make one pot meal.Whenever iam in a hurry and running out of ideas I make this lemon rice and is always liked by all at home.Also this is a nice rice variety which is made during several festivals such as ADI PERUKKU OR AADI 18 as it is called and also during KANU PONGAL.It is made as a neivedhyam for mar many poojas too.You can serve it with any chips vadam and any spicy dry curry.Also mor kuzhambu when served with this is a great side dish option.It is also known as chitranna.With very less ingredients and less time to make let us see how I made lemon rice.
INGREDIENTS
| Cooked Rice | 1 cup |
| Mustard | 1/2 tsp |
| Urad Dal | 1/2 tsp |
| Channa Dal | 1/2 tsp |
| Red Chilli | 1 |
| Green Chilli | 1 |
| Asafoetida | a pinch |
| Groundnuts | 1 tsp |
| Turmeric Powder | 1/2 tsp |
| Salt | to taste |
| Curry Leaves | a sprig |
| Lemon Juice | 2 tsp |
| Sesame Oil | 3 tsp |
HOW TO MAKE
- In a pan add sesame oil followed by mustard,urad dal and channa dal.Add now red chilly ,green chilli,groundnuts and curry leaves.
- Add turmeic powder to the pan.Squeeze lemon and set aside.
- Add lemon juice to the tempered mixture.Add now cooked rice on top of this mixture.
- Mix well.
- Lemon Rice is ready.Enjoy with chips or vadams.
