Ashoka halwa is a tempting and tasty sweet made in marriages, functions etc. but when i had this last May at a relative’s wedding i was so tempted with this that i just wanted to try it.Here comes the recipe.
INGREDIENTS
| Moong dal | 1/2cup |
| Wheat flour | 1/2 cup |
| Rice flour | 1/2 cup |
| Ghee | 1 1/2 cup |
| Sugar | 1 i/4 cup |
| Cashewnuts | a few |
| Raisins | a few |
| Orange food colour | a pinch |
| Cardamom powder | 2 pinches |
HOW TO MAKE
- Soak moong dal for an hour and cook it a heavy pan till properly done.
- Strain excess water and allow it to cool for later use.In a separate pan dry roast both wheat flour and rice flour by adding a bit of ghee.Make sure it dosen’t turn black.Keep the flame low.
- When properly roasted turn off the flame. In a blender add moong dal and roasted powders and grind to a fine paste.
- In a pan add ghee and roast the cashewnuts and raisins and keep tham aside. In the same pan add the ground paste and carefully turn upside down to ensure proper cooking avoiding lumps. Also add the food colour.
- When almost cooked add sugar and mix well.Add remaining ghee now and check the consistency.
- Garnish with cashews and raisins.
- Serve hot and enjoy.
Notes
- You can add badams, walnuts or pistachios for garnishing.
- Instead of wheat flour you can use corn flour or maida.
- Any food colour looks great but i feel orange or red is best.
