Badusha is a very sweet recipe made during Diwali or in weddings.Though it appears a difficult task to make these sugar syrup soaked dumplings, when properly made with correct measurements becomes easy work.I was also in a dilemma, but was too tempted to try that i finally gave it a shot.I had seen my MIL making these and was not sure whether it would turn out soft and good.I also saw a few friends blogs and found a recipe which goes like this..
INGREDIENTS
| Maida | 1cup |
| Baking powder | a pinch |
| Ghee | 3tsp |
| Curd | 1tsp |
| Oil | to deep fry |
| Pista crushed | to decorate |
| Water | for making dough |
FOR MAKING SUGAR SYRUP
| Sugar | 1/2 cup |
| Water | 1/4 cup |
| Lemon juice | 1/4 tsp |
- Take in a bowl maida, baking powder, curd, ghee and water little by little so as to resemble crumbles.
- Add more water to make a smooth dough.Make balls out of the dough.
- Flatten it and make a small impression in the middle with your thumb.Fry them in hot oil.
- Take them out .Always cook in a medium flame.Meanwhile make a sugar syrup using sugar and water.
- When it reaches one string consistency. When you take the badushas out put them in the prepared sugar syrup.Add lemon juice and switch off the flame.Let it soak for a while. Now fry the other batch and fry till you make and fry all of them.
- The badushas need to be soaked and well coated with sugar syrup.
- Lastly add crushed pistas for garnish.
- Enjoy Badushas this Diwali by preparing and treating your family and friends.
Notes
- Don’t make the batter too hard add enough water ,otherwise Badushas will turn hard.
- You can add cardamom powder to the sugar syrup.
- In marriages they add vanaspati to add asoft texture.
- Add badushas only when the oil is heated well.
