KADAMBA CHUTNEY

DSC08662Kadama means a mixture and kadamba chutney is a mixture of vegetables sauteed to perfection and blended with spices.I had this chutney at a hotel in kumbakonam when we were visiting temples of our family deity.The taste was so good,that I couldn’t help asking the people who served with what it was made.And when they told it was a mixture of vegetables I was curious and learnt the recipe from them.I tried this at home many a times but had time to click this weekend at leisure.You can have a variety of choice of vegetables other than I have choosen,this recipe believe me you will end up eating an extra idli or dosa.Even fussy eating children will like this chutney.See below the tasty recipe of Kadamba Chutney..

INGREDIENTS

Carrot 1
Chayote/Chow Chow 1/4
Onion 1
Tomato 1
Curry Leaves 2 sprigs
Coriander Leaves a few
Grated Ginger 1/2 tsp
Oil 1 tsp
Salt to taste
Urad Dal 1/2 tsp
Red Chillies 2-3
Tamarind a gooseberry shaped ball
TO TEMPER
Oil 1/4 tsp
Mustard 1/4 tsp
Urad Dal 1/4 tsp
Asafoetida a pinch

HOW TO MAKE
  • Chop onion,tomato carrot,chayote,ginger finely.Add curry leaves and coriander leaves and keep them ready.In a pan add oil and add urad dal and redchilles.Once roasted add chopped veggies alongwith ginger,curry leaves and coriander leaves.

  • Once sauteed and cooled place them in a blender with tamarind and salt.Grind to a fine smooth consistency.Add water to make the blending easier,but don’t add too much.

  • Temper with mustard seeds,urad dal and asafoetida and serve with idlis,dosas or arisi upma.

Notes
  • You can even add snake gourd,bottle gourd,green peas,brinjal etc.
  • Add chillies more if you want it spicier.
  • Adding green chilles also will enhance the taste.
