It was on my trip to shimla I tasted this palak sev.We were travelling to shimla by road and when we stopped at the highway at Haldirams outlet for evening tea I chanced to see the array of snack items displayed on the shop.There I bought palak sev packet and much to my surprise it was very flavourful,crunchy and aromatic.When we returned back I was very eager to try out and made a small batch.It turned out well and liked by all at home.It had the same crispy feel and tasted great with a good cup of masala chai.I made it again later and this time clicked the pictures to put it in my blog.So readers,do try oyt this recipe and let me know..
INGREDIENTS
| Palak/Spinach leaves | 10-12 |
| Gram Flour/Besan | 1 cup |
| Rice Flour | 3/4 tsp |
| Ajwain/Omam | 1/2 tsp |
| Garam Masala Powder | 1/4 tsp |
| Red Chilli Powder | 1/2 tsp |
| Turmeric Powder | 1/4 tsp |
| Salt | to taste |
| Oil | to deep fry |
- Wash and clean palak leaves.Place in a blender alongwith omam and grind it to a smooth paste.Take besan and rice flour in a vessel.Add red chilli powder,garam masala,chaat masala and salt to it.Add the ground palak paste too.Make a soft dough.




- Take the press and place the dough to it.You can check for the consistency.It should not be very stiff.Heat oil in a kadai and press directly on the oil.Once sound subsides take it out.




- Serve with masala chai.
Notes
- For extra taste add half a teaspoon of chaat masala.
- You can add 2 green chillies while grinding palak and omit red chilli powder.
- Store in an air tight container.
