AKKARAVADISAL/JANMASHTAMI RECIPES

DSC02379Akkaravadisal is a typical iyengar dessert made and offered to GOD during festivities.It can be sugar or jaggery based but made with rice.In iyengar style it is made with jaggery and is famous neivedhyam in VISHNU temples.It uses milk and lots of ghee,which gives the extraordinary creamy and melt in the mouth texture and is truly divine to taste.I know of a sugar based version of this recipe too,which I intend to post later.You can try for the forthcoming Janmashtami,this recipe which if followed with proper steps is an easy recipe to make.Try out this yummilicious recipe this festive season and let me know how it turned out..

INGREDIENTS

Raw Rice 1 cup
Full Cream Milk 1/2 cup
Jaggery 3/4 cup
Cardamom Powder a pinch
Water 2 cups
Saffron Strands a few
Ghee 4-5 tsp
Cashewnuts a few
Raisins a few

HOW TO MAKE

  • Soak rice in water.Take jaggery ,powder it and adding water make it to dissolve.

  • Dissolve saffron strands in milk.Meanwhile strain rice and add milk to it.Add required water and cook for 3 whistles.

  • Mash well with the help of a laddle.Add saffron strand with milk.

  • Add strained jaggery syrup.Mix well and add ghee and wait till it ghee leaves the sides.

  • Roast in ghee cashewnuts and raisins and drop in the akkaravadisal.

  • Delicious Akkaravadisal is ready for offeribg to GOD.

Notes

  • You can add edibile camphor for that peculicar aroma.
  • Add ghee as given,other wise it would be a compromise on taste.
  • Adding safron enhances the flavour.
  • Cook well till the desirable consistency is reached.
